Sweet Potato Casserole with Butter Extra Virgin Olive Oil

 

3 cups sweet potatoes (about 4 good sized ones)

1/2 cu sugar

1/2 cup Delizia Butter Extra Virgin Olive Oil

2 eggs, beaten

1 tsp vanilla

1/3 cup milk

 

Topping:

1/3 cup Delizia Butter Extra Virgin Olive Oil

1 cup light brown sugar

1/2 cup flour

1 cup chopped pecans

 

Boil and mash potatoes.  Mix in butter oil, sugar, eggs, vanilla, and milk.  Spoon into a 13 x 9 inch baking dish.  For topping, melt butter and mix in remaining ingredients.  Sprinkle in top of potato mixture.  Bake at 350 degrees for 30 minutes or until topping is golden brown.  Serves 10-12.

Note:  this recipe can be doubled or tripled for a crowd.  You can also make it the night before and bake the day of serving.
