Amazing Beef Tenderloin with Balsamic Sauce

Ingredients:

4 6oz steaks, 2 TBS Sea Salt,1TBS coarsely ground pepper, 2 TBS Arbosana, Arbequina, Koroneiki Olive Oil, & Balsamic sauce as listed: 1/4 cup red wine, 1/4 cup dry sherry, 4 TBS Traditional 18 Year Balsamic, 1 shallot , chopped, 2 Garlic cloves, chopped, 2 egg yolks, 1/3 cup Butter Olive Oil (fresh thyme spring garnish)

Directions:

Rub tenderloin steaks evenly with salt/pepper. Cook steaks on grill or in hot oil in large skillet until desired doneness. Serve with Balsamic Sauce & fresh Thyme Sprig. For the sauce, bring first five ingredients to boil in small saucepan: cook two minutes. Cool completely, and whisk in egg yolks into the wine mixture.  Cook over low heat, whisking continually until thickened. Slowly whisk in butter oil until well blended. Serve immediately over steaks.
