So yes, we were out fishing in the Florida Keys with Capt. Mike- Jersey Key Charters. We caught some beautiful yellowtail & mangrove snapper. (enough for six dinners!)
This is how you make fresh fish!
- On a flat plate, place two tablespoons of flour and spread around. Add two tablespoons of Zatarains Blackening Seasoning, 1 Teaspoon Oh Olive Garlic seasoning, 1/2 Teaspoon Backyard BBQ. Mix into the flour and again spread around.
- Take your fresh fish filets and dredge both sides in the flour/spices mixture.
- Heat a good size pan and coat with Garlic & (Green Chili oil, if you like it spicy).
- Drop in each fish filet taking care to leave a bit of space between each.
- Cook about one minute each side until golden brown. Please only turn once!
- Serve with corn on the cob & a green vegetable (broccoli) with a nice slice of homemade Focaccia bread! Delicious!
