Fish fillets are some of the easiest main courses to cook. With a little olive oil & seasonings, you can have the most delicious meal! A very favorite of ours is Key Lime Mahi (great for preparation of any fish). It's subtle lime flavor is enhanced by our Persian Lime Olive & Butter Olive Oil.
Key Lime Mahi-Mahi (or your fave fish fillets)
Ingredients:
- 8 Oz. of 1/2″ Fish Fillets
- 1 Oz. Persian Lime Olive Oil
- 2 Oz. White Wine
- 1/2 Oz. Key Lime Juice (you can buy Key Limes at any grocery and squeeze the juice)
- 1/2 cup Diced Tomatoes
- 3/4 cup diced red pepper & onions
- 1 tbs. Butter Olive Oil
- 1 tsp. Oh Olive Garlic Seasoning
- Salt & Pepper to taste
- Lime wedges for serving
Preparations:
Heat lime olive oil in a 10″ saute pan on medium heat. When pan is hot, add fish fillets, cook for two minutes each side, and turn over. Add wine and lime juice; then cook until stock is reduced by half. Add tomatoes, red pepper and onions. Cook for a minute. Remove from heat. Add seasonings, and salt and pepper to taste. When pan cools a bit, add the butter olive oil. Then remove the fish from the pan and whisk gently until the sauce is combined. Pour the sauce over the fish and garnish with chopped parsley. Serve with lime wedges. This is delicious with a green salad or fresh green beans. Some like it especially with black beans & rice.
