Chili Blanco

1 tbsp Delizia Garlic Extra Virgin Olive Oil
3/4 lb. skinless boneless chicken breasts, cut into 3/4 in cubes
1 tbsp finely chopped garlic
3 (15 oz) cans white beans, drained
2 (4 oz) cans chopped mild green chilies
1 (16 oz) can Lindsay Naturals Green Ripe California Pitted Olives, drained
1 cup chicken broth
1 1/2 cups thinly sliced green onions
1 1/2 tbsp ground cumin
1 1/2 tsp dried oregano leaves
2 tbsp Delizia Chipotle Extra Virgin Olive Oil
salt and hot pepper seasoning or cayenne pepper (optional)
Optional Garnishes: Chopped tomato, shredded white cheddar or other cheese, sour cream, chopped fresh cilantro

Heat oils in a large saucepan over medium-high heat. Add chicken and garlic, sauce 3 minutes. Stir in remaining ingredients except salt, hot pepper seasoning and garnishes. Cover, bring to a boil, reduce heat. Simmer 10 minutes.
Season with salt and hot pepper sauce to taste if desired. Garnish as desired.
Makes 4-6 servings
