Mahi Mahi with Almonds and Garlic Olive Oil

1/4 cup Butter Extra Virgin Olive Oil

1/4 cup Garlic Extra Virgin Olive Oil

1/2 tsp salt

1/2 tsp dry basil leaves

1/2 tsp dry parsley leaves

1 Tbsp fresh lemon juice

1/4 tsp pepper

2 lbs Mahi Mahi fillets, cooked

1/2 cup sliced almonds, no salt, roasted in oven slightly

In saucepan, heat Butter Extra Virgin Olive Oil over low heat. Add Garlic Extra Virgin Olive Oil, salt, lemon juice, pepper, basil and parsley. Cook with Mahi fillets for 3 minutes until heated through and well seasoned. Sprinkle almonds over Mahi Mahi and drizzle left over cooked seasoned mixture over almonds and fish. Serve immediately with a side of Persian Lime Aioli or Garlic Salsa and rice.
