Oh, Olive! Romaine Salad with Orange Vinaigrette

1 package fresh Romaine lettuce leaves
1/2 package matchstick carrots
1 medium red delicious apples, cut in chunks
1 cup seedless red grapes
1 can mandarin orange segments, drained
Orange Vinaigrette (from recipe below)
1 package pecans

Orange Vinaigrette
1/2 cup sweet marmalade
3 tbsp Delizia Pineapple White Balsamic Vinegar
3 tbsp Delizia Extra Virgin Olive Oil
1/8 tsp ground ginger

Place first four salad ingredients in bowl, toss gently. Arrange oranges on top of salad. Cover and refrigerate until serving. Before serving, drizzle with Orange Vinaigrette and top with pecans.
Makes 6-8 servings
