Sweet baby peppers (1-2 peppers per guest)
1/2 lb. Greek Feta cheese
1/2 cup mayonnaise
Bunch of spring onions and green olives
dried oregano or Galena Garlic Italian Seasoning
1/4 cup Delizia Extra Virgin Olive Oil
Cut the peppers in half, brush them lightly with olive oil and place on a baking tray for 5-8 minutes under a medium grill. Meanwhile, crumble the feta cheese with your fingers in a bowl, add mayonnaise, finely cut spring onions, 1/4 cup olive oil and a good pinch of oregano. Mix well. Remove the peppers from the grill, fill with the mix and garnish with green olives.
Makes 1-2 peppers per guest
