Olive & Blue Cheese Salsa

 

1 (6 oz.) jar blue cheese stuffed olives

1/2 cup (2 oz.) crumbled blue cheese

1/4 cup chopped red onion

2 tbsp each Arbequina Extra Virgin Olive Oil and chopped fresh chives

1 tbsp Delizia Red Wine Vinegar

1/4 tsp freshly ground black pepper

 

In a medium bowl, combine all ingredients, mix well.  Cover, refrigerate at least 2 hours or overnight.  Let stand at room temperature 30 minutes before serving.  Serve with grilled chicken, pork, or beef.
