2 large sweet potatoes
3 Tbsp Cinnamon Pear Balsamic Vinegar
3 Tbsp Butter Extra Virgin Olive Oil
1 Tbsp brown sugar (optional)
Salt and Pepper to taste
Peel and dice sweet potatoes into 1/2 inch cubes. Place cubes on a large cookie sheet. Drizzle Cinnamon Pear Balsamic and Butter Extra Virgin Olive Oil over sweet potatoes and mix to coat each piece. Sprinkle with salt and pepper. Place in a preheated 400 degree oven for 20 minutes or until sweet potatoes are fork tender, turning at least once to keep them moist and coated. Sprinkle with optional brown sugar before serving.
