Pita Pesto Pizza

2 large pita bread rounds 

4 Tbsp prepared pesto 

3 Tbsp of Delizia Basil extra virgin olive oil 

3/4 cup prepared tomato sauce

1/2 lb. fresh mozzarella cheese, sliced

10 crimini mushrooms, sliced

1 small red onion, sliced

12 ripe pitted olives, thickly sliced 

8 basil leaves, thinly sliced 

 

Heat oven to 500 degrees. Spread the pesto, then tomato sauce over pita bread. Top evenly with cheese, mushrooms, inion, olives and basil. Cut basil leaves into ribbons and place on top. Bake 8-10 minutes or until heated through. Cut each pita into quarters.  

6-8 servings
