Rich Buttery Whole Wheat Extra Virgin Olive Oil Bread

 

1 cup all purpose flour

1/2 cup whole wheat flour

1 tsp salt

2 tsp baking powder

1 tsp Galena Garlic Pumpkin Pie Spice

6 Tbsp Delizia Butter Extra Virgin Olive Oil

2/3 cup sugar

2 large eggs, beaten

1 cup mashed bananas

1/2 cup toasted walnuts or pecans

 

Preheat oven to 350°.

Grease a standard size loaf pan with one tsp butter oil.  In a large bowl mix thoroughly the first five ingredients.  In a separate bowl, blend together 6 Tbsp of the butter oil, 2/3 cup sugar, and 2 large eggs beaten.  Fold in 1 cup mashed bananas and toasted walnuts or pecans.  Stir until blended well.

Combine the wet ingredients in the bowl with the dry ingredients until incorporated.  Do not over mix.  Pour into pan and bake until a toothpick inserted in middle comes out clean, approximately 60 minutes.  Let cool in pan for 5-10 minutes before removing from pan and cooling on wire rack.

Makes 1 loaf
