Salmon with Mango Cilantro Salsa

4 medium salmon fillets

1 ripe mango, peeled and diced into 1/2" pieces

1/4 cup chopped scallion, green part only

1/4 cup diced red bell pepper

1 Tbsp finely diced fresh jalapeno

2 Tbsp fresh cilantro, chopped

1 small clove garlic, minced

1 Tbsp fresh lime juice

4 tsp Persian Lime Extra Virgin Olive Oil

1/4 tsp Galena Garlic Pink Hawaiian Sea Salt

1/4 tsp Oh Olive Garlic Blend

Drizzle 2 tsp of Persian Lime Olive Oil over the salmon. Sprinkle with Oh Olive Garlic Blend and Pink Hawaiian Sea Salt. Bake salmon fillet at 400 degrees for 15 to 20 minutes, depending on the thickness of each fillet. Mango Cilantro Salsa, lightly toss all other ingredients into a bowl. Chill in refrigerator for at least 1 hour for flavors to meld. 

Serve salsa as an accompaniment to the salmon. Mango Cilantro Salsa also goes great with grilled chicken or other meats.
