Ingredients:
- 2 1/2 cups all purpose flour
- 1 cup packed brown sugar
- 1 tsp. Baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. cloves
- 16 ounces chopped mixed candied fruits & peels ( 2 cups)
- 1 cup chopped walnuts
- 1 cup raisins
- 1 16 ounce can peaches drained & chopped
- 1 14 ounce can sweetened condensed milk
- 1 cup prepared None Such mincemeat (or comparable) *Note: the None Such mincemeat with brandy is the best one
- 1/4 cup apricot brandy
- 1/8 cup blood orange olive oil
Directions:
In a very large mixing bowl, stir together the flour, brown sugar, baking soda, cinnamon, and cloves. Stir in fruits, nuts, peels, and raisins. Add peaches, milk, mincemeat, brandy and orange olive oil. Mix well. Turn into two greased and floured pans. Bake in 300 degree
oven for 2 hours or until done. Cool completely; remove from pans. Wrap in clear plastic wrap, then foil over that. Store in a cool place or refrigerator. Makes two delicious fruitcakes! Before serving, cut into smaller pieces & drizzle with the blood orange olive oil.
