Slow Cooker French Country Chicken

Really? French Country Chicken for the Crockpot? You bet! Try this delicious recipe:

3 tablespoons olive oil; 1 Green Chili Olive Oil, 2 Garlic Olive Oil
4 carrots sliced
1 medium onion chopped
4 celery stalks cut in 2" pieces
6-8 boneless chicken breasts or tenders (about 2 lbs)
1.5 teaspoons fresh Thyme (or dried)
1 teaspoon fresh or dried Tarragon
1 can cream of chicken soup
salt and pepper to taste
1 pkg. dry onion soup
3/4 cup white wine
Drizzle the olive oil to coat the bottom of the crockpot. Place the onions, carrots, and celery on top the olive oil. Arrange chicken pieces over the veggies. Sprinkle the thyme, tarragon, salt, & pepper over the chicken. Next, pour the chicken soup over the chicken, followed by the dry onion soup and the white wine lastly over all. Cover and cook on high for 4-5 hours. Stir once about halfway through cooking. Serve with rice or cooked noodles.
