Spicy Sweet Roasted Vegetables

4 Tbsp Delizia Chipotle Extra Virgin Olive Oil
3 Tbsp Delizia Raspberry Balsamic Vinegar
2 large yams
2 large white potatoes
1 cup baby carrots
1 zucchini, cut and sliced
1 bunch trimmed asparagus
1 cup red peppers, cut and sliced
2 Tbsp Delizia Garlic Extra Virgin Olive Oil
1/4 cup basil
1/2 tsp salt
1/2 tsp ground black pepper

Preheat oven to 425 degrees. Grease baking sheet with 1 Tbsp olive oil. Place yams, white potatoes, and baby carrots onto baking sheet and bake for 25 minutes. Then add the zucchini, asparagus, and red peppers and drizzle with the remaining olive oil. Bake for an additional 25 minutes or until tender.

Remove from the oven and let cool. Toss together the balsamic vinegar, garlic oil, basil, salt and black pepper. Combine with roasted vegetables and bake for an additional 10 minutes.
